#1 BAKING MIX RECIPES 

 


Every-day Fruit Cake – 20cm

This recipe was given to me by one of my flat mates during my university days in the 1970s! I was well known for experimenting in the kitchen even then. Once I was diagnosed coeliac,  this was one of the first recipes I adapted. It is very easy to put together, won’t crumble on cutting and even easier to eat.

 Keeps well for at least 4-5 days stored in an airtight container. 

Ingredients:

– 500g dried fruit

– 250g butter or Olivani

– ½ cup brown sugar

– 3 eggs

– 1 tsp each – vanilla, lemon, almond essences

– 2 cups Bliss #1 flour blend

– 1 tsp baking powder

Method:

  1.  Put fruit in a large saucepan and cover with water. Bring to boil and simmer 5 minutes. Drain well then chop in the butter and stir to melt. Add the sugar.
  2. Beat the eggs then add to fruit mix with essences. 
  3. Fold in the #1 Flour Blend and baking powder sifted together. 
  4. Put into 20cm cake tin lined with baking paper. Smooth top.
  5. Place in a 150oC no fan oven. Bake 1 – 1 ¼ hours until a skewer comes out clean. Check after one hour.   Allow to cool in tin then cut to enjoy.

 


Gluten-free Crepes

(makes 4-6 large)

At our shop in Queenwood this was one of our daily staples. We made them early in the morning and filled them with shredded chicken bound in a sweet curry and apricot sauce mayo, spinach and carrot. 

They are great filled for lunch or smothered in berry sauce and cream. 

Ingredients

  • 2/3 cup #1 Bliss Baking mix
  • 1/8 tsp salt 
  • ¾ cup milk
  • 2 large eggs
  • 1 Tbsp. canola oil

Method

  1. Put the milk, eggs and oil in a bowl or food processor and mix well to combine. Add the flour and salt and mix making sure there are no lumps. Leave to rest in the fridge for 30 mins. This allows time for the flour to absorb the moisture.
  2.  If after 30 minutes it is too thick add a little milk.
  3. Cook on med-high in 20cm skillet.
  4. If keeping the mix for a few days stir well before using as it will thicken. Add a splash of milk if needed.

 


Vanilla Biscuits

Sift into a bowl of a food processor and  mix to combine;

  • 1 1/2cups Bliss #1 Baking mix
  • 1/2 cup caster sugar
  • 1/2 teaspoon baking powder.  

Add:   100g diced butter and process until well incorporated.

Add:   1 x egg white and 1/2 teaspoon vanilla essence.

Process until it comes together .

Roll out on baking paper dusted with rice flour. Cut into shapes as desired.

Bake 160o 8-10 minutes until the edges are lightly browned and when pressed in the center it feels firm.

Variations:

  • Roll into balls and dip into 100s and 1000s.
  • Roll into balls, make a dent in the middle and fill with jam.
