AFGHAN BISCUITS RICIPE
This will make 18 Afghan biscuits.
What you will need:
-340g Afghan baking mix (includes Hubbards gf cornflakes)
-170g butter, softened
-Chocolate icing pack/0.25g butter/1tbsp hot water
-Walnuts (optional)
Afghan Baking instructions:
(1) Put dry ingredients into food processor or electric mixer.
(2) Add and mix butter (softened but not melted) to the dry mix and process until well incorporated and comes together. Stop half way through to scrape down the sides to ensure it mixes evenly. It will have the same texture as pastry.
(3) Add the cornflakes and mix briefly.
(4) Measure out 18 x 25g pieces and roll into balls. Place onto a baking sheet lined with baking paper. Leave a 2cm gap as they will spread a bit.
(5) Press down with a fork to flatten slightly.
(6) Bake 160oC fan bake 15-20 mins. To test if cooked press the center lightly. If it leaves a dent leave a few more minutes.
(7) Prepare icing by mixing icing pack, butter and water together well.
(8) Cool then fill with chocolate icing and top with walnuts.
Once baked store in airtight container in fridge.
